Apple Raisin Coffee Cake - cooking recipe

Ingredients
    1/2 c. shortening
    1 1/2 c. sugar
    1 egg
    3 c. plain flour
    2 tsp. baking powder
    1/2 tsp. salt
    1 c. milk
    1 c. raisins
    2 baking apples, peeled and sliced
    2 Tbsp. sugar
    1 tsp. ground cinnamon
Preparation
    Cream the shortening and sugar.
    Add eggs and beat well. Combine flour, baking powder and salt.
    Add to creamed mixture alternately with milk, beating well after each addition.
    Stir in the raisins.
    Spread batter in a greased 13 x 9 x 2-inch baking pan.
    Top with apples.
    Combine sugar and cinnamon; sprinkle over the apples.
    Bake at 375\u00b0 for 40 to 45 minutes or until cake tests done.
    Serve warm.
    Yields 12 servings.
