George'S Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 small yellow onion
    2 eggs, slightly beaten
    1/4 c. milk
    1 (5 oz.) can evaporated milk
    1/2 c. chopped celery to taste
    1/2 c. chopped bell pepper
    1/2 lb. bread crumbs
    1/2 stick butter
    1/2 tsp. sage
    1 tsp. pimento
    3 oz. grated cheese
    salt and pepper to taste
Preparation
    Peel and chop eggplant.
    Soak in salted water in refrigerator several hours or overnight.
    Soak bread crumbs in mixture of the two milks.
    Saute onion, celery and bell pepper in margarine until tender.
    Boil eggplant until nearly tender.
    Drain well.
    Mix bread crumbs, eggplant and sauteed vegetables.
    Add eggs, salt to taste, pepper, sage and pimento.
    Blend well.
    Place in greased casserole.
    Top with cheese.
    Bake in 350\u00b0 oven until golden brown.
    Serve hot.
