Eggplant Casserole - cooking recipe

Ingredients
    1 1/2 lb. eggplant, sliced
    1/2 c. chopped green pepper
    3 c. cooked rice
    2 eggs, beaten
    1 can cream of mushroom
    1/4 tsp. black pepper
    1 tsp. salt
    1/2 c. onion, chopped
    1/2 c. milk
    1/2 c. mayonnaise
    1 c. Cheddar cheese
Preparation
    Cook eggplant and drain.
    Add all ingredients except half of cheese.
    Mix and bake at 350\u00b0 until bubbly.
    Sprinkle the rest of cheese on top and return to oven until melts.
