Cheesy-Lime Mold(Blender) - cooking recipe

Ingredients

1 (3 oz.) pkg. lime-flavored gelatin
1 1/4 c. boiling water
1 (3 oz.) pkg. cream cheese, cut in cubes and softened
1/2 c. mayonnaise or salad dressing
1 Tbsp. lemon juice
1 medium cucumber, peeled
1/4 medium green pepper

Preparation

Put gelatin and boiling water in blender container.
Blend at low speed until gelatin is dissolved.
Add cream cheese, mayonnaise and lemon juice to blender container; blend smooth. Halve cucumber lengthwise; remove seeds and cut in pieces.
Add cucumber and green pepper to blender container; blend until coarsely chopped.
Pour into 3 1/2 cup mold.
Yields 6 servings.
