Chicken Croquettes - cooking recipe

Ingredients
    3 c. finely chopped chicken or turkey, cooked
    1/4 c. chopped onion
    1/2 c. butter
    1/2 c. flour
    1 pt. light cream
    2 eggs, slightly beaten
    dash of pepper
    dash of nutmeg
    bread crumbs
    oil or shortening for frying
Preparation
    Chop cold meat very fine.
    Season with pepper, nutmeg and onion.
    Melt butter; add flour and mix until smooth.
    Add cream and cook slowly, stirring constantly until sauce is thick.
    Add chopped meat and salt.
    Chill.
    Shape into croquettes.
    Dip into eggs, then into bread crumbs.
    Roll lightly in shape.
    Fry in hot fat until browned, about 5 minutes.
