Parmesan Chicken - cooking recipe

1/4 c. butter
3/4 c. crushed butter-flavored crackers
1/2 c. grated Parmesan cheese
1 Tbsp. dried minced onion
1 Tbsp. dried parsley flakes
1/2 tsp. garlic powder
1/8 tsp. pepper
1 broiler-fryer chicken (2 1/2 to 3 lb.), cut up and skin removed (optional)
Preparation

Melt butter in a 13 x 9 x 2-inch baking dish. In a shallow bowl, combine the next 6 ingredients. Dredge chicken in butter, then in crumb mixture. Place chicken in the baking dish with skin side up and thick edges toward the outside. Sprinkle with remaining crumb mixture. Arrange on rack in broiler pan. Bake in 425\u00b0 oven 40 to 45 minutes or until tender and juices run clear and chicken is no longer pink. Yield: 4 to 6 servings.
