Ingredients

2 eggs
2/3 c. oil
2 tsp. vanilla
1 tsp. grated lemon rind
3/4 c. sugar
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
Preparation

Using dinner fork, beat eggs, oil, sugar, lemon rind and vanilla until thoroughly mixed.
Add dry ingredients; mix well. Drop by teaspoon on ungreased cookie sheets.
Stamp with glass dipped in sugar.
Bake until lightly brown on edges.
Bake at 400\u00b0 for 8 to 10 minutes.
