Tortellini Ala Panna - cooking recipe

Ingredients
    4 oz. butter
    1 small onion, diced
    5 to 7 sliced mushrooms as desired
    2 cloves garlic, minced
    1/2 tsp. thyme
    6 Tbsp. diced fresh tomato
    1 pkg. tortellini (meat or veal)
    2 c. heavy cream
    1 c. grated Locatelli cheese
    1 tsp. dry or fresh basil to taste
    salt to taste (optional)
Preparation
    In a deep saute pan, melt 1/2 butter.
    Add onion and garlic; saute 3 to 4 minutes.
    Add mushrooms and tomatoes.
    Saute another 3 to 4 minutes.
    Add remainder of butter and thyme.
    Add cream. If using dry basil, add now.
    Reduce mixture in half.
    If using fresh basil, add after cream is reduced.
