Cabbage Ham And Cheese Salad - cooking recipe

Ingredients
    1 medium head cabbage, sliced 2 to 3-inches long
    1 large slice smoked ham, cut 1/8-inch thick and julienned
    3/4 lb. Gruyere cheese, cut in strips
    1/3 c. Roquefort cheese, crumbled and at room temperature
    1 Tbsp. stone ground mustard
    1/3 c. red wine vinegar
    1 1/2 c. olive oil
    1 tsp. garlic, finely minced
Preparation
    Mix all of the dressing ingredients, adding oil last, slowly. Can put dressing on an hour or two before serving.
    Serve on a bed of Boston lettuce and radicchio.
    Garnish with 6 tablespoons fresh parsley, chopped and put on the top and sprinkle with fresh ground pepper.
