Mexican Hominy - cooking recipe

Ingredients
    6 slices bacon
    1 c. chopped onion
    1 (20 oz.) can hominy
    1 (16 oz.) can tomatoes
    1 Tbsp. chili powder
    1 tsp. salt
    1/4 tsp. pepper
    1/2 lb. Cheddar cheese, grated
Preparation
    Fry bacon until crisp; remove from pan and drain, reserving 2 tablespoons drippings.
    Saute onion until transparent.
    Add hominy, tomatoes, chili powder, salt and pepper; cook until slightly thickened.
    Pour half of hominy mixture into 1 1/2-quart casserole.
    Top with half of grated cheese.
    Fill with rest of hominy mixture and top with remaining cheese.
    Bake in a 350\u00b0 oven for 30 minutes or until cheese is melted.
