Mary'S Lima Bean And Chicken Stew - cooking recipe

Ingredients
    4 Tbsp. roux
    1 pkg. skinless chicken thighs (about 8 pieces)
    1 pkg. frozen lima beans
    3 medium potatoes, chopped
    salt and pepper to taste
Preparation
    In a large pot, add 3 quarts of water.
    Bring to a boil and add roux.
    When roux is dissolved, put in chicken pieces and potatoes.
    Let cook on medium heat for 30 minutes and add lima beans.
    Cover and simmer for 1 1/2 hours.
    Serve over rice.
