Banana Muffins(Low-Fat And Low Cholesterol) - cooking recipe
Ingredients

3 Tbsp. vegetable oil
1 egg or 1 egg substitute
1/4 c. skim milk
1 1/3 c. mashed very ripe bananas (about 3 medium)
2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt (optional)
1 c. whole wheat flour
Preparation

Beat egg, oil and milk.
Stir in mashed bananas.
Mix dry ingredients and stir into banana mixture until flour is moistened. Fill tins 1/2 to 2/3 full.
Bake about 23 minutes for large or 15 to 18 minutes for small muffins.
Let cool about 15 minutes before removing from pans to let texture firm up.
Bake at 400\u00b0.
Makes 12 servings.
