1/2 tsp. apple pie spice
2/3 c. orange juice
2 1/2 to 3 lb. pork loin roast (boneless)
1/2 tsp. thyme leaves
salt and pepper
2 medium sweet potatoes, cut in quarters
2 medium apples, cored and cut in quarters
