Chicken Creole - cooking recipe

Ingredients
    3 lb. boneless chicken breasts
    2 Tbsp. olive oil
    2 1/2 c. chopped onion
    2 1/2 c. chopped bell peppers
    1 c. chopped fresh parsley
    1 Tbsp. minced garlic
    1 c. white wine
    2 c. chicken stock
    2 cans cajun tomatoes
    2 Tbsp. soy sauce
    1/2 to 1 tsp. cayenne pepper
Preparation
    Rinse chicken and simmer; save chicken stock.
    Cut into bite-size pieces.
    In large pot heat olive oil.
    Saute onions, bell peppers and parsley until onions are clear.
    Add garlic, wine and stock.
    Stir in tomatoes and soy sauce.
    Bring to boil.
    Add chicken pieces.
    Turn down heat and simmer 1 hour.
    Serve over cooked rice.
    Serves 8.
