Coconut Surprise Cake - cooking recipe

Ingredients
    2 1/4 c. sifted flour
    3 Tbsp. baking powder
    1 tsp. salt
    1 1/2 c. sugar
    2/3 c. shortening
    1/2 c. milk
    3 eggs
    1/2 c. milk
    1 1/2 tsp. vanilla
    1 recipe 7-Minute Frosting
    2 bananas, sliced
    freshly ground coconut or pkg. coconut
Preparation
    Sift flour, baking powder and salt together.
    Combine sugar, shortening and 1/2 cup milk in mixer bowl.
    Beat at medium speed for 5 minutes.
    Add eggs, 1/2 cup milk and vanilla.
    Beat 10 minutes.
    Pour into 2 greased 9-inch pans.
    Bake at 350\u00b0 for 30 to 35 minutes or until layers test done.
    Cool in pans for several minutes.
    Remove from wire rack to cool completely.
    Spread 7-Minute Frosting over 1 cake layer.
    Arrange banana slices over frosting.
    Add second layer of cake.
    Spread 7-Minute Frosting over top and sides of cake.
    Sprinkle with coconut.
    Yields 12 servings.
