Jambalaya - cooking recipe

Ingredients
    1 Tbsp. lard
    1 tsp. flour
    2 large tomatoes or 1/2 can
    1 c. uncooked rice
    1 chopped onion
    1/2 chopped green pepper
    bit of garlic salt, pepper and red pepper
    chopped shrimp, ham, oysters or whatever
Preparation
    In an iron Dutch oven, brown onion in lard, then stir in flour.
    Next the chopped tomatoes, shrimp and ham and let them cook while you stir carefully.
    Add 2 cups boiling water and let simmer a while; wash the rice and add to the pot.
    Stir once and cover.
    Cook until done.
