Ingredients

4 oz. dried tomatoes (dried, not packed in oil)
3 cloves garlic or less, depending on taste
1/2 c. (approximately) Parmesan cheese
1/4 to 1/2 c. olive oil
salt and pepper to taste
Preparation

Steep tomatoes in warm water (1/2 to 1 hour) until soft. Drain.
In food processor, mince garlic.
Add tomatoes and cheese and blend.
Slowly add olive oil until desired consistency is reached.
Make night before serving.
Serve on crackers or toasted baguettes, etc.
