Oriental Chicken - cooking recipe

Ingredients
    4 Tbsp. oil
    1 1/2 lb. boneless, skinless chicken breasts
    2 c. chicken broth
    1/2 tsp. salt
    1/4 tsp. pepper
    1 tsp. ground ginger
    8 tsp. cornstarch
    3 Tbsp. water
    1 1/2 c. sliced carrots
    1 1/2 c. broccoli florets
    hot, cooked rice
Preparation
    Cut chicken in 1/2-inch strips.
    Heat 2 tablespoons oil in a large skillet.
    Stir-fry chicken 3 to 4 minutes.
    Add chicken broth, salt, pepper and ginger.
    Simmer for 5 minutes.
    Heat 2 tablespoons oil in a separate skillet and stir-fry vegetables for 5 minutes.
    Blend cornstarch with water and stir into chicken. Add cooked vegetables and serve over rice.
