Low-Fat Broccoli-Rice Casserole - cooking recipe

Ingredients
    1 medium onion
    1 can Healthy Request Campbell's cream of mushroom soup
    8 oz. light Velveeta cheese, cubed
    2 c. chopped fresh broccoli
    1/2 to 1 c. sliced mushrooms (fresh)
    1 box cooked long grain and wild rice (Uncle Ben's original flavor)
    1 can water chestnuts, sliced
Preparation
    Microwave onion until slightly tender.
    In large bowl, mix cooked rice, cubed cheese, onion, cream of mushroom soup and water chestnuts.
    Slightly steam broccoli; add to mixture.
    Pour mixture into casserole dish sprayed with nonstick type spray.
    Bake at 350\u00b0 for 30 minutes.
