Lo-Cal Crock-Pot - cooking recipe

Ingredients
    1 large can V-8
    1 eggplant (small), cut in 1-inch cubes
    8 oz. mushrooms, sliced or diced
    1 c. green beans
    1 small potato, diced (can substitute this with water chestnuts)
    2 carrots, sliced thin
    2 chicken breasts, meat cut into small pieces
Preparation
    Add vegetables and meat to crock-pot.
    Add V-8; season with oregano or Italian seasoning or your favorite spice combo.
    Cook on slow/low crock-pot setting for 6 to 8 hours.
    Serve in large soup bowls.
    Sprinkle with Parmesan cheese.
    Delicious!
    Makes about 200 calories per serving.
