Garden Veggies Parmigiana - cooking recipe

Ingredients
    1 onion, chopped
    1 zucchini, diced
    1 vine-ripened tomato, peeled and diced
    1 red or green bell pepper, seeded and minced
    pinch of dried or 1 tsp. fresh oregano leaves
    1 (8 oz.) can plain tomato sauce
    2 oz. (4 thin slices or shredded) part skim Mozzarella cheese
Preparation
    Combine vegetables in a baking dish.
    Sprinkle with oregano. Pour on the tomato sauce.
    Bake uncovered in a preheated 350\u00b0 oven for 20 minutes.
    Top with Mozzarella and bake an additional 4 to 5 minutes until cheese is melted.
    Makes 6 servings, 60 calories each.
