Sunshine Carrots - cooking recipe

Ingredients
    7 or 8 medium carrots
    1 Tbsp. granulated sugar or brown sugar
    1 tsp. cornstarch
    1/4 tsp. ground ginger
    1/4 c. orange juice
    2 Tbsp. butter or margarine
    1/4 tsp. salt
Preparation
    Bias slice the carrots crosswise about 1/2-inch thick.
    Cook in boiling salted water for 10 to 15 minutes or until tender; drain and discard liquid.
    In a small saucepan, combine sugar, cornstarch, ginger and salt.
    Add orange juice.
    Cook, stirring constantly until thickened and bubbly.
    Boil 1 minute and remove from heat.
    Stir in butter.
    Pour over hot carrots, tossing to coat evenly.
    Garnish with parsley or orange twist.
    Yield: 6 servings.
