Chow Chow Relish - cooking recipe

Ingredients
    1 qt. chopped cabbage
    3 c. chopped cauliflower
    2 c. chopped onions
    2 c. chopped green tomatoes
    2 c. chopped sweet green peppers
    1 c. chopped red peppers
    3 Tbsp. canning salt
    2 1/2 c. vinegar
    1 1/2 c. sugar
    2 tsp. dry mustard
    1 tsp. turmeric
    2 tsp. celery seed
    1/2 tsp. ground ginger
    1 tsp. mustard seed
Preparation
    Combine the chopped vegetables.
    Sprinkle with salt and let stand about 6 hours.
    Drain.
    Mix vinegar, sugar and spices and simmer 10 minutes.
    Add vegetables.
    Simmer 10 minutes.
    Bring to a boil and pack, boiling hot, into hot, sterilized jars.
    Leave 1/8 inch of headspace.
    Adjust caps.
    Yields 4 pints.
