Cucumber Relish - cooking recipe

Ingredients
    1 gal. finely chopped cucumbers
    1 qt. finely chopped onions
    1 c. finely chopped sweet red pepper
    1 c. finely chopped green pepper
    1 c. finely chopped carrots
    3 Tbsp. pickling salt
    2 tsp. ground turmeric
    1 tsp. celery seed
    1 tsp. whole cloves
    2 Tbsp. mustard seed
    3 (2-inch) cinnamon sticks
    3 c. vinegar
    3 c. sugar
Preparation
    Combine cucumbers, onions, peppers, carrots and salt in a large mixing bowl.
    Mix well and refrigerate at least 8 hours or overnight.
    Drain.
    Tie spices in a bag.
    Combine spice bag, vinegar and sugar in a large saucepan.
    Bring to a boil.
    Add vegetables.
    Boil gently, stirring often, 15 to 20 minutes or until desired consistency.
    Pack into hot sterilized jars, leaving 1/2-inch headspace.
    Screw metal bands on tightly.
    Process in a boiling water bath for 15 minutes.
    Yield: About 6 pints.
