Carrot Muffins - cooking recipe
Ingredients

1 3/4 c. sifted flour
2 1/2 tsp. baking powder
1 tsp. salt
2/3 c. milk
1/2 c. salad oil
1 egg
1/4 c. sugar
2 medium carrots, peeled and sliced thin
1 Tbsp. orange rind
Preparation

Sift dry ingredients together into a large bowl.
Place milk, oil, egg, sugar, carrots and orange rind into blender and blend well together.
Pour over dry ingredients and stir only until moistened.
Spoon mixture into greased, lined muffin pans, filling 2/3 full.
Bake at 425\u00b0 for 25 minutes.
