Pina Colada Pudding - cooking recipe

Ingredients
    1 (4 serving size) pkg. sugar-free instant vanilla pudding mix
    1 1/2 c. skim milk
    1 (1.3 oz.) envelope whipped dessert topping mix
    1 (8 oz.) can crushed pineapple (juice pack)
    2 Tbsp. coconut, toasted
Preparation
    Stir together pudding mix, milk and dessert topping mix in a small mixing bowl.
    Beat with an electric mixer on low speed about 30 seconds or until moistened.
    Beat on high speed about 2 minutes more until thickened.
    Fold in undrained pineapple.
    Spoon pudding mixture into 6 dessert dishes.
    Sprinkle each serving with toasted coconut.
    Chill at least 1 hour.
