Harvest Cake - cooking recipe

Ingredients

4 c. diced apples
2 c. sugar
3 c. flour
1 c. oil
2 eggs
1 c. chopped walnuts
2 tsp. baking soda
2 tsp. nutmeg
2 tsp. vanilla

Preparation

Mix apples and sugar; let stand 1 hour.
Stir together flour, soda and spices.
Beat eggs; add oil and vanilla.
Add apple mixture.
Combine mixture with eggs; stir in walnuts.
Bake in greased and floured angel food cake pan in 350\u00b0 oven for 1 hour. Frost with plain white icing and top with sprinkled walnuts.
