Chicken And Rice Casserole - cooking recipe

Ingredients
    1 whole chicken or 2 whole chicken breasts
    1/2 c. chopped onion
    3 stems celery, chopped
    1 c. uncooked rice
    1 medium can mushrooms
    3 Tbsp. margarine
    1 small can pimientos
    salt and pepper to taste
Preparation
    Remove and discard skin from chicken.
    Cook chicken in 6 cups of water until tender; remove chicken, reserving broth.
    Debone and cut chicken into small pieces; set aside.
    Cook rice in 2 cups chicken broth according to package directions; set aside.
    Saute onion, celery and pimientos in margarine until tender.
    Mix together all ingredients, except chicken.
    Butter a casserole dish.
    Place chicken in dish and place mixed ingredients over chicken.
    Cover with broth and bake at 325\u00b0 until bubbly hot.
