Baked Eggplant And Crabmeat - cooking recipe
Ingredients

1 large eggplant, peeled and diced
2 Tbsp. margarine
1 large onion
1 small bell pepper
2 eggs
1/2 c. cracker crumbs
1 lb. crabmeat, flaked
Preparation

Boil eggplant until tender; drain and let cool. Saute onion and bell pepper in margarine. Then add eggplant. Combine the well beaten eggs with the crabmeat and season to taste. Pour into a greased baking dish. Sprinkle with cracker crumbs. Bake at 300\u00b0 for 30 to 40 minutes. Can be frozen.
