Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 lb. ground beef
    1 medium onion
    2 Tbsp. shortening
    1 c. milk
    1 can mushroom soup
    1 c. cracker crumbs
    1 egg
Preparation
    Peel and cut up eggplant in small cubes; cook in salt water until tender.
    Brown beef and onion in shortening.
    Mix with eggplant; season with salt and pepper.
    Add milk, soup, beaten egg and 1/2 cup crumbs.
    Mix thoroughly.
    Pour into greased baking dish; top with remaining crumbs.
    Bake for 1 hour at 350\u00b0.
