Floating Fruit Parfaits - cooking recipe
Ingredients

1/2 c. sliced strawberries
3/4 c. boiling water
1 pkg. Jell-O brand strawberry or any flavor gelatin
1/2 c. cold water
3/4 c. ice cubes
1 c. plus 6 Tbsp. thawed Cool Whip lite whipped topping
Preparation

Divide fruit among 6 parfait glasses. Stir water into gelatin until dissolved. Stir in cold water and ice cubes until ice melts. Pour 3/4 cup gelatin over strawberries in glasses. Refrigerate 20 minutes, until set but not firm. Stir 1 cup whipped topping into remaining gelatin with whisk until smooth. Spoon over gelatin in glasses. Refrigerate 1 hour. Garnish with remaining whipped topping. Makes 6 servings.
