Crown Pork Roast - cooking recipe

Ingredients
    8 lb. pork roast
    zest of 1 orange
    1 garlic clove
    3 to 4 Tbsp. rosemary
    1 1/2 Tbsp. olive oil
Preparation
    Heat oven to 425\u00b0. Position rack in lower half of oven. Season with salt and pepper. Brush meat with 4 tablespoons olive oil. Place meat in heavy-duty roasting pan with rack (large enough not to crowd sides). Roast 15 minutes. Reduce heat after 45 minutes until meat is well browned and meat thermometer registers 170\u00b0 to 180\u00b0 (about 1 1/2 to 2 hours). Spread season mixture over meat (inside and out).
