Vegetarian Split Pea Soup - cooking recipe

Ingredients
    2 c. split peas, rinsed
    7 c. water
    2 Tbsp. vegetable oil
    1 medium chopped onion
    1 Tbsp. finely chopped garlic
    6 carrots, chopped coarsely
    1 tsp. cumin
    salt and pepper to taste
    3 celery stalks, coarsely chopped
Preparation
    Place split peas in a large pan and add enough cold water to cover.
    Let soak 15 minutes and drain.
    Return peas to same pan and add water and bring to boil.
    Reduce heat, simmer 45 minutes. Heat oil in large skillet, add onion, saute until golden brown, add garlic and saute 3 minutes.
    Add onion, garlic, carrots, celery and peas.
    Mix in cumin; season with salt and pepper. Simmer until peas and vegetables are tender, about 15 minutes. Serve.
