Chicken Cutlets With Sautéed Mushrooms - cooking recipe

Ingredients
    3 Tbsp. olive oil
    Salt and freshly ground pepper
    4 chicken cutlets, thinly pounded
    1 box (10 oz.) white button mushrooms, sliced
    1/2 c. diced red or green bell pepper
    1 garlic clove, crushed
    4 thin slices (about 3 oz.) mozzarella cheese
Preparation
    Heat 1 Tbsp. oil in large non-stick skillet.
    Sprinkle chicken on both sides with salt and pepper.
    Add to hot oil and cook over high heat 2 minutes each side.
    Remove chicken and set aside.
    Add remaining 2 Tbsp. oil to skillet.
    Add mushrooms and red pepper and cook, stirring over medium heat, 8 minutes or until mushrooms are lightly browned.
    Stir in garlic.
    Sprinkle with salt and pepper and cook 1 minute more.
    Return browned chicken breasts and any juices to skillet.
    Place one slice of cheese on top of each. Cover and cook over medium-low heat until cheese melts, about 3 minutes.
    Spoon mushroom mixture over chicken and serve.
    Makes 4 servings.
