Ingredients

beets
2 c. sugar
2 c. water
2 c. white vinegar
2 to 3 Tbsp. pickle spice
Preparation

Cook beets; cool and peel.
Mix syrup; let come to a boil. Drop sliced beets in, let simmer for 15 minutes.
Pack in jars and seal.
This syrup is good to put over fresh beets and serve right away.
