Seafood Newburg - cooking recipe
Ingredients

4 tsp. butter or margarine
1/4 c. flour
1 1/2 to 2 c. light cream
2 egg yolks, beaten
1/2 c. white wine
cayenne pepper
meat of 3 lobsters or equivalent in crab meat
Preparation

Saute meat in butter or margarine in large skillet.
Sprinkle with 1/4 cup flour.
Slowly add cream, stirring constantly, on low heat.
When this comes to simmer, add egg yolks, mixing thoroughly. Never boil!
Heat through until warm.
Add wine and heat through. Sprinkle with cayenne pepper.
Serve over toast.
