Rice With Mushrooms And Artichokes - cooking recipe

Ingredients
    1 c. chicken broth
    1/2 c. raw long grain rice
    1 tsp. olive oil
    1/4 lb. mushrooms, sliced (about 2 c.)
    1 medium red bell pepper, diced
    2 (6 oz.) jars marinated artichoke hearts, drained
    2 Tbsp. chopped fresh parsley
    1/4 tsp. dried thyme
Preparation
    In a medium saucepan combine broth and 1/3 cup water.
    Bring to a boil.
    Stir in the rice.
    Reduce heat to low; cover and simmer until liquid is absorbed and rice is tender, about 20 minutes.
    While rice is cooking, in a medium skillet, heat the oil over medium-high heat.
    Add mushrooms and red pepper; cook until tender, stirring occasionally, 5 to 6 minutes.
    Stir in artichokes, parsley, thyme, cooked rice and salt and pepper to taste.
    Heat through, about 3 minutes.
    Spoon into a serving dish and serve hot.
