Split Pea Soup - cooking recipe

Ingredients
    1 lb. dried split peas, looked and washed
    1 large onion, chopped
    3 medium carrots, chopped fine
    3 cans seasoned chicken broth
    2 to 3 celery stalks, chopped fine
    olive oil
Preparation
    Heat chicken broth until boiling; add peas and boil, uncovered, 2 minutes. Remove from heat and cover; let stand at least 1 hour. Warm peas and stir in remaining ingredients. Cook over medium-high heat until tender. Makes about 2 quarts.
