Chicken Pot Pie - cooking recipe

Ingredients
    3 Tbsp. margarine or vegetable oil
    1/4 c. flour
    1 1/4 c. chicken broth
    1 c. milk
    1 1/2 tsp. salt
    1/4 tsp. pepper
    2 c. cooked chicken
    1 c. frozen peas
    1 c. carrots, sliced in circles and cooked just tender
Preparation
    Filling:
    In nonstick skillet, heat the margarine until bubbling hot or vegetable oil until sizzling hot. Stir in the flour and cook over medium heat while stirring briskly until flour is just beginning to tan. Quickly combine broth and milk; add to the flour roux in a large stream while stirring.
    Use a whisk if you have trouble with lumps in gravy. Turn heat down slightly and cook, stirring constantly, until the mixture thickens. Add the chicken, vegetables and seasonings.
    Place the mixture in an 8 x 8 x 2-inch baking dish. Top with crust.
