Forgotten Roast - cooking recipe

Ingredients
    1 rib roast (at least 8 lb.)
    prepared mustard, salt and pepper
Preparation
    During the morning, preheat oven to 325\u00b0.
    Rub mustard into the red exposed meat.
    Place in oven for 1 1/2 hours.
    Turn off oven; do not open door.
    Half an hour before you are going to serve the roast, turn oven back on to 325\u00b0.
    Your meat will be uniformly medium-rare from the fatty side right down to the bone. If you wish to have meat a little less rare, cook at 350\u00b0 instead of 325\u00b0.
