Spinach Stuffed Mushrooms - cooking recipe
Ingredients

1 lb. fresh spinach or 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 lb. fresh mushrooms (about 16 medium)
3 Tbsp. butter, melted
1 c. ricotta cheese
1 Tbsp. plus 1 tsp. brown mustard
pinch crushed oregano
Preparation

Wash and clean spinach.
Place in covered skillet and steam for 5 minutes.
Remove, thoroughly drain and chop.
Remove stems from mushroom caps and finely chop.
Saute chopped stems and spinach in 1 Tbsp. butter.
In a mixing bowl, combine the spinach mixture with the remaining ingredients.
Spoon the stuffing into the caps and refrigerate.
Before baking, place on cookie sheet and brush with remaining butter.
Bake in 350\u00b0 oven for 15 minutes or until heated through
