Tripe Italian Style - cooking recipe
Ingredients

5 lb. beef tripe
1 (28 oz.) can crushed tomatoes
4 (8 oz.) cans tomato sauce
1 can water
3 medium size potatoes, diced
1 1/2 tsp. parsley
1/2 tsp. oregano
1/2 tsp. dried basil or 6 fresh leaves
2 Tbsp. olive oil
3 cloves garlic, minced
1 small onion, diced
Preparation

Boil tripe for 2 hours with 1 tablespoon of baking soda to soften.
Then rinse tripe with cold water.
Cut into 3 x 1/2-inch strips; set aside.
