Brazilian Black Beans - cooking recipe

Ingredients
    5 c. black beans
    1 lb. smoked beef sausage
    1/2 lb. smoked pork shoulder or Canadian bacon
    2 large onions, chopped
    3 garlic cloves, crushed
    salt to taste
Preparation
    Wash beans and pick over.
    Cover with water; soak overnight. Slice meats; add to beans with rest of ingredients.
    Add more water if not completely covered.
    Bring to boil.
    Lower heat and simmer, covered, for 2 1/2 hours, or until beans are te nder.
    Remove 1 cup of the beans and puree in blender or food processor.
    Return to pot.
    Add water if beans are too thick or dry.
    Bring to simmer; cook for 5 minutes.
    Serve with rice; garnish with orange slices.
