Spanish Rice Pie - cooking recipe

Ingredients
    2 c. cooked brown rice
    3/4 c. grated sharp Cheddar cheese
    2 eggs, beaten
    2 Tbsp. chopped fresh parsley
    1/2 tsp. salt
    1 lb. fresh spinach
    2 Tbsp. wheat germ or bread crumbs
    1 Tbsp. butter
Preparation
    Preheat oven to 350\u00b0.
    Combine rice and cheese.
    In a separate bowl combine eggs, parsley, salt and pepper.
    Add the two mixtures to spinach and pour into an oiled casserole or large pie plate. Mix wheat germ or bread crumbs with butter and spread on top. Bake 35 minutes or until set.
    Serves 4.
