French Onion Soup - cooking recipe

Ingredients
    2 lb. onions
    2 Tbsp. butter
    2 Tbsp. olive oil
    salt and pepper to taste
    2 Tbsp. flour
    2 cans broth (beef)
    2 cans beef consomme
    2 cans water
    2 Tbsp. brandy (optional)
    1/2 lb. Gruyere cheese (2 c. grated)
Preparation
    Slice onions in half lengthwise first, then in thin slices. In a large pan, heat butter and oil over medium heat.
    Add onions, 1 teaspoon of salt and pepper.
    Cook, stirring occasionally, until onions soften.
    Reduce heat and simmer until onions are caramelized, about 45 minutes.
    Stir in flour.
    Bring to a bubble. Add liquids and simmer 30 minutes.
