Petite Cherry Cheesecakes - cooking recipe
Ingredients

2 (8 oz.) pkg. cream cheese, softened
1 Tbsp. lemon juice
24 vanilla wafers
3/4 c. sugar
2 eggs
1 tsp. vanilla
1 (21 oz.) cherry pie filling
Preparation

Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.
Line small muffin pans with paper baking cups and place a vanilla wafer in bottom of each cup.
Fill cups 2/3 full with cream cheese mixture.
Bake 15 to 20 minutes or until set at 375\u00b0.
Top each with about 1 tablespoon cherry pie filling. Chill.
Place in refrigerator until serving time.
Serves 24.
Use baking cups that vanilla wafer will fit in.
