Lemon Chess Pie - cooking recipe
Ingredients

1 1/2 c. sugar
2 tsp. all-purpose flour
finely grated rind of 2 lemons
5 eggs
juice of 2 lemons
1/3 c. melted butter or margarine
prepared 9-inch pie shell, unbaked
Preparation

Preheat oven to 325\u00b0.
Mix sugar, flour and rind.
Beat in eggs
1
at a time.
Stir in lemon juice and melted butter, adding a
bit
at a time and beating well after each addition. Pour filling
into pie shell and bake about 1 hour until puffy and golden
(filling
will
seem
unset or very soft).\tAs pie cools to room temperature the filling will settle and thicken. Serve at room temperature.
Makes 1 pie.
