Eggplant Casserole - cooking recipe
Ingredients

2 large eggplant
3 c. cornbread
1 lb. sausage, browned and drained
1/3 c. butter
2 c. chopped onion
1 (16 oz.) can tomatoes
1 egg
pepper to taste
cracker crumbs
Preparation

Preheat oven to 350\u00b0.
Cook eggplant.
Mix with other ingredients except cracker crumbs.
Place in a 3-quart casserole dish.
Sprinkle the fine cracker crumbs on top and dot with butter.
Bake 1 hour.
If planning to freeze casserole, bake about 45 minutes.
