Smothered Chicken - cooking recipe
Ingredients

1 to 2 lg. carrots
cooking oil
1 lg. onion, thinly sliced
1 lb. mushrooms
4 skinless, boneless chicken breasts
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. ground pepper
1/4 c. all purpose flour
2 c. chicken broth
1/2 tsp. dried tarragon (or Italian seasoning)
Preparation

Quarter carrots and cut into 1/2-inch pieces; set aside with onion and mushrooms.
Coat a nonstick skillet with oil and brown chicken on both sides, after salt and peppering; set aside.
