Calabacitas Con Pollo - cooking recipe

Ingredients
    1 1/2 lb. boneless chicken thighs or breasts
    1 large onion, chopped
    1 to 3 garlic cloves, minced
    3 to 5 small Mexican squash or zucchini, chopped
    3 to 4 ears fresh corn, cut from cob or canned corn
    1 can chopped tomatoes, undrained
    1/2 to 1 tsp. comino
    1 tsp. salt
    1/2 tsp. pepper
Preparation
    Chop chicken into bite size pieces.
    Brown in a Dutch oven with a little olive oil.
    Add onion and garlic, stirring until onion begins to get a little limp.
    Add squash, corn, tomatoes, comino, salt and pepper.
    Simmer about 30 minutes or until chicken and squash are done.
